Aligning and Elevating University-Based Low-Income Nutrition Education

Aligning and Elevating University-Based Low-Income Nutrition Education through the Land-Grant University Cooperative Extension System report was prepared as part of a project funded by NIFA’s Institute of Food Safety and Nutrition in response to the request of two former ECOP Chairs, Douglas Steele and Daryl Buccholz, to facilitate increased visibility and improved alignment of EFNEP and SNAP-Ed through the Land-Grant University Cooperative Extension System.  Recent developments in these programs make this report very timely.  Recommendations are given for universities, the land-grant university system, and federal/national partners. National Nutrition Certification Program

 

Utah State University Food $ense (SNAP-Ed) program highlights 4 areas focusing on improving the lives of the individuals and families they reach.  Through public values research Food $ense (SNAP-Ed) is able to indicate that SNAP-Ed improves education, health, local agriculture and lives of those they reach. 

National Nutrition Certification Program (NNCP) is a nationally recognized free nutrition certification program designed for nutrition educators.  The program is available through Utah State University’s SNAP-Ed program as a resource to improve the knowledge and skills of nutrition educators across the country.  See the NNCP brochure here

Best Practices in Nutrition Education

 

Colorado State University has released a Best Practices in Nutrition Education document.  This document seeks to promote consistency and efficacy in program planning, implementation and evaluation.  Twenty-eight best practices within five domains were identified: program delivery, program design, educator characteristics, educator training and evaluation.

Long-term Evaluation of EFNEP and SNAP-Ed

“Long-term evaluation of EFNEP and SNAP-Ed” documents impacts from an adult, series-based nutrition education program for low-income families in Wyoming.

It is featured in the Winter 2012 issue of The Forum for Family and Consumer Issues.  Mary Kay Wardlaw of the University of Wyoming and Susan Baker of Colorado State University are the authors.

Taste-testing Evaluation Tool

The Taste Testing Tool (TTT) was developed and piloted by UC CalFresh SNAP Ed.  The publication is on the pilot conducted in FFY 10 and 11.  TTT is a teacher administered tool used for routine evaluation of food-tasting activities tied to the nutrition lessons provided.   This six-item evaluation tool is intended to capture student willingness to try new foods and ask for them at home.  The evaluation instrument was tested for reliability compared to student response.

The findings showed students were willing to ask for the foods at home (P_0.0001). Compared with younger students (preschool through sixth grade), older students (seventh through 12th grade) were less likely to try the foods in class and less willing to try them again or ask for them at home (P_0.05).Students reported significantly greater previous exposure and willingness to try the food again for fruits than for vegetables (P_0.0001).

We also suggested a teacher-administered taste test tool is feasible to use in a group setting and capable of yielding valid, reliable information to evaluate student response and to guide SNAP-Ed program delivery.

The Community Nutrition Education Professional Community of Practice will keep implementers at Land-Grant Institutions informed on the fast-paced and nuanced rules, regulations and complexities of SNAP-Ed; provide a vehicle for mentoring and professional development and function as a collaboration tool to continue to evolve, strengthen, and sustain SNAP-Ed within the LGU system.  While serving as a repository of materials the site will also facilitate internal communication within the system as it relates to Community Nutrition Education, especially the Supplemental Nutrition Assistance Program – Education (SNAP-Ed).
